In case you're wondering, Mario Bros. arcade sprites are able to use 7 colors + transparency (3BPP), but the background tiles are 2BPP

Only 3 colors are used on the NES sprites, the extra color you're seeing is probably the transparent color.

@WilliamStef: You can have 6 colors if you make two layers per sprite, similar to how Mega Man's sprites were done.
